Frozen Chocolate Covered Bananas

Healthy Chocolate Covered Bananas Balanced Grettie Fitquestmom

Over the Memorial Day Weekend we went to a BBQ at a friend’s house and I was tasked with bringing a healthy-ish dessert.

Frozen chocolate covered bananas were always my favorite Disneyland treat and I think it is because that was the only place I ever saw them when I was younger.  I had a MASSIVE sweet tooth, yet I would choose those every time over a Mickey ice cream sandwich or the other fun ice cream treats they sold.

I thought that chocolate covered frozen bananas would fit the bill and would be fun for my daughter and I to make together.  She is the age now where I am wanting to give her more freedom in the kitchen and this was the perfect recipe for that.

This dessert ended-up being a hit with kids and adults alike…I’m pretty sure they will make a regular appearance this summer.

INGREDIENTS

  • Ripe Bananas (not too ripe though)
  • Popsicle sticks
  • Chocolate chips for melting (I used Enjoy Life brand)
  • Various toppings
    • Trail mix (we chopped ours up in the blender)
    • Nuts
    • Mini marshmallows
    • Raisins
    • Cereal
    • Sprinkles
    • Coarse sugar

METHOD

  1. Cut bananas into 3″ slices
  2. Stick a Popsicle stick into each banana piece
  3. Place the banana pieces on a cookie sheet and freeze for an hour or longer
  4. Melt the chocolate chips (I used the double boiler method)
  5. Coat each frozen banana with the melted chocolate and immediately sprinkle on the toppings (the chocolate will harden FAST)
  6. Lay the finished product back on the cookie sheet and into the freezer until ready to serve

PB CUP / FUDGE RECIPE – Healthy Halloween Candy

Healthy Peanut Butter Chocolate Pumpkin PB 4

I teamed-up with Nuts.com in an attempt to make Halloween less scary for your waistline.  Nuts.com has been working hard on their Healthy Snack Page and I am happy to help spread the word.

Of course when you think of Nuts.com you think of nuts.  One of the world’s best flavor combos in my opinion is PB and C.  Who doesn’t love peanut butter and chocolate (other than my very own daughter…what???).

I set off on a quest to make a healthier peanut butter cup / peanut butter fudge and the results taste amazing if I do say so myself.  My son offered to eat all of them (such a kind boy).  What’s even more awesome is how quickly these come together.

It’s up to you whether or not you add chocolate.  These cups / fudge taste great either way.

INGREDIENTS – Makes 10 

40g dark chocolate

2Tbs (28g) raw cacao butter

1/4c (64g) peanut butter (crunchy or smooth)

1/4c (24g) peanut butter powder

1/2 dropperful Liquid Sweetleaf Stevia (English Toffee flavor is my favorite)

Method

If using the chocolate, place 4 grams of chocolate into each of the 10 candy molds (I used THIS one).  Microwave in 15 second increments to melt (you have to be REALLY careful not to burn the chocolate in the microwave).  Once sufficiently melted, spread the chocolate and place the mold into the freezer.

In a double boiler melt the cacao butter, chocolate, and peanut butter powder stirring constantly with a whisk.

Once melted, remove the molds from the freezer and divide the peanut butter mixture evenly between the 10 candy molds.

Place the candies in the fridge to set-up.  Store uneaten candies (if there are any) in the fridge or freezer.

Nutrition Information:

Per Candy (Chocolate & PB) – 82 cal / 2.7C / 3P / 6.8F

Per Candy (Just PB Mixture) – 75 cal / 1.8C / 2.8P / 6.3F

HAPPY VALENTINES DAY

I wish you all a very happy day filled with love and friendship.  I thought I would revisit one of my family’s favorite recipes…the recipe I created for my honey last Valentines and the recipe that my children requested for tonight’s dessert!

SKINNY BITCH CHILI

I originally blogged about this Skinny Bitch chili recipe HERE and thought I would re-post the recipe since it is an awesome FAST and EASY one to make for the Super Bowl.

This chili tastes great over polenta, brown rice, with a side of cornbread or on its own.

DEB’S CHILI – Yields 6 servings

2 Tbs grapeseed oil (I omitted this)
1 medium onion, finely diced
1 (4-ounce) can green chilis, diced
1 envelope taco seasoning
1 (28-ounce) can tomatoes, diced
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
1/2 cup salsa
2/3 cup vegan cheddar cheese, shredded (I omitted this)
1/4 cup vegan sour cream (I omitted this)

In a large saucepan, heat the oil over medium heat and sauté the onions until soft, about 5 minutes (I water sautéed mine). Stir in the chilis, taco seasoning, tomatoes, kidney beans, and black beans. Let the mixture simmer for about 15 to 20 minutes (after water sautéing the onions I threw all of the ingredients in the slow cooker around lunchtime and kept it on low until dinner).

Serve with salsa, cheese, and sour cream.

TEACHER / COACH GIFTS

I am in the thick of preparing gifts for the coaches and teachers in my children’s lives and I thought I would share with you what we are gifting food-wise this year.

My daughter wanted to gift her teachers with some body butters, and my son will be giving some of his middle school teachers gift certificates, but we will be giving the coaches in our lives the “healthier” caramel popcorn that I made one month as my Secret Recipe Club assignment.

The original version was loaded with butter and sugar, so I rolled-up my sleeves and did my best to remake the recipe. My family loves the recipe I came-up with and while it is definitely a treat, it is much healthier than the traditional version.

I just air popped the popcorn and will be making it into caramel popcorn tomorrow.  This recipe is SO EASY.  I have made caramel popcorn before where you have to stir and stir and stir and with this recipe you shake it all up in a big brown paper bag…it couldn’t be more simple.

WATERMELON POPS

It is getting hot here!  My brain is constantly thinking about what I can make as a nice cooling treat.  With all of the cute fruit and melon wands I have been seeing on Pinterest, I decided to take it one step further by freezing them while simultaneously simplifying the fruit wands by sticking with just one fruit and one cookie cutter cut per Popsicle.

I cut off all of the rind of the watermelon while keeping the watermelon in tact and then made 1/2-3/4″ thick big round slices (We used a mini-melon, but next time I plan on using a standard watermelon).  The kids and I then cut out shapes in the watermelon using cookie cutters, stuck small wooden dowels in them, placed them on cookie sheets and froze them…Instant whole-food Watermelon Popsicles.

Yum!  Perfect for the Fourth.

VEGAN NACHO CHEESE aka VEGAN QUESO

I have to apologize for the fact that the picture for this post is not up to par, but I had to put my pride aside and post this recipe anyway because it is SO GOOD!

What would New Years Day be without nachos???  The other day I had a craving for nachos and with the New Year coming-up I decided to figure this one out…How do you make a yummy vegan nacho cheese sauce?  It turns out the answer is really easy.

My family had so much fun building their own nachos and I think everyone was happy that mama had a nacho craving!

INGREDIENTS
 
1 bag Daiya Cheddar Cheese
1 ½ cups So Delicious Unsweetened Coconut Milk
1/3 cup Trader Joe’s Serrano Salsa Fresca (so good!)
 

Warm all ingredients over medium to medium-low heat until completely melted and incorporated.

I really encourage using a good quality salsa as it will have a big impact on the final product.  Trader Joe’s Serrano Salsa Fresca is seriously good.

This would also be really great in a vegan 7 layer dip.

VEGAN CHOCOLATE MOUSSE CUPS – Using Sweetriot Chocolate

I thought I would share with you the dessert I made for us to have tonight after our Christmas Eve meal.  With all of the treats we have been indulging in, I wanted to offer a yummy dessert, but have it just be a few decadent bites vs. a huge piece of cake or pie.

I based the recipe for my “Healthier” Chocolate Mousse on my Chocolate Mousse Frosting recipe (click HERE for that recipe).  I made some alterations to the recipe to make it slightly sweeter and more chocolaty…think dark chocolate.

This mousse is firm, but that is how I wanted it so it would retain its shape when piped.

I used Sweetriot Dark chocolate to make the mousse and I have to tell you that their chocolate absolutely rocks my world and it is vegan, gluten-free, kosher, and their company is carbon-free to boot.

I like to consider myself a bit of a chocolate aficionado and this chocolate hits the mark.  Not only is their chocolate amazing, but they are amazing too!

And let me tell ya…their chocolate makes a killer chocolate mousse!  Without further ado…

INGREDIENTS – Makes 4 1/2 cups

14 ounce package of extra firm tofu (I used Wildwood)
1 cup vegan chocolate OR chocolate chips (I used Sweetriot 85% DARK chocolate that I chopped-up finely)
2cups coconut milk or soy milk (vanilla or chocolate)
6 Tbs. cacao powder
6 packets Sweetleaf stevia
Chocolate cups for serving

Melt the chocolate over a double boiler.

While the chocolate is melting, blend the remaining ingredients in a high speed blender until very smooth (I used my Vitamix). Use the center agitator and stop blending a few times in order to scrape down the sides.

Once the chocolate has melted, add it to the rest of the ingredients in the blender and blend until smooth, scraping down the sides as needed. The mixture will now be warm and not quite yet the consistency of pudding.

To serve the dessert as pudding, pour the mixture into a glass container and allow it to cool in the fridge for 20-30 minutes to thicken.

If using this recipe as mousse, keep it in the fridge for several hours to overnight so it firms-up completely. Prior to piping, you may whip the mousse with a handheld mixer to whip some air into it (this is not necessary, but optional).

Pipe the mousse into chocolate cups or the container of your choosing and serve.
