LIMP LETTUCE – Easy Fix

For some reason all of the organic romaine I have been buying from the store has been going limp really quickly lately.  I eat A LOT of romaine, so I needed to find a solution to this problem.   I found a really easy fix…

Cut the base off of the romaine, and stick it into a large beer mug (mine are from Crate & Barrel) filled with high quality filtered water (the same way you would put flowers in a vase).  It is crucial that you use high quality water since the romaine (or whatever lettuce you will be using) will drink it up and as a result so will you!

Leave the lettuce in its vase out on the counter if you plan on using it that day or put it into the fridge.  You will be shocked by how quickly it crisps-up.  I took these pictures yesterday and within the span of an hour my romaine was better than ever.

QUICK SNACK – Chili Apple Slices

The other day my son and I were running errands and after he helped me unload the car he asked if he could have a snack.  I asked him what he wanted and he mentioned that when he was hanging-out at a friend’s house his mom made a snack that he really liked…apples with lemon and chili.

I love learning about snacks that other cultures serve.  I was really excited to try this!  I sliced the apples, squeezed some Meyer lemon on top, and sprinkled them with chili powder (by Frontier).  I really loved the combination of sweet from the apples, sour from the lemon, and spicy from the chili powder (my son LOVES spicy food just like both of his grandfathers).

After we finished the plate we decided to try it again with Via Nueva’s Chili con Limon…brilliant!

ASK GRETTIE – Veganizing a Tea Party

My latest Ask Grettie column for Chic Vegan

I am hosting a tea party and one of the guests is vegan.  Can you recommend some vegan recipes (I will be serving mint tea and English breakfast tea)?  My vegan cookbook only has recipes for fruit crisps and nut balls.  Not very inspiring!!!

Hi Kristie!

It can be very intimidating to host vegan guests when you are not vegan yourself.  The good news is that it really is very easy to “veganize” recipes.

I have a few ideas…

When I think of “tea” I always think of delicate crust-less sandwiches.  If you go this route just look at the ingredients and make sure there is no dairy or eggs in the bread.  Many sliced breads do not have milk or egg in them, so this should be relatively easy to find.

I don’t know how sophisticated the children’s palate’s are, but most children like peanut butter and jelly, jelly and cream cheese (vegan), or just plain jelly sandwiches.  Cucumber sandwiches are another classic tea sandwich that would be great to serve for the adults.

Another idea along the same sandwich lines would be to make some wonderful pinwheel sandwiches by taking tortillas, spreading them with hummus, filling them with colorful veggies (peppers, cucumber, avocado, spinach, onion), rolling them like a jelly roll, and slicing them for a gorgeous colorful presentation.

Salads are also a great addition to any tea menu.  My friend made an amazing Israeli couscous salad and brought it to our most recent BBQ.  Her salad was so fresh and consisted of cooked Israeli couscous, fresh basil in a chiffonade, cherry or grape tomatoes, balsamic or red wine vinegar, olive oil, salt, and pepper.  Sometimes the simplest salads are the most impressive since they allow the quality ingredients to speak for themselves.  Another salad that would flow beautifully with your menu is tabouli.  The mint and other fresh herbs in the salad would go well with the mint tea you plan to serve.

If you want to make a vegan sweet or coffeecake, it is really easy to veganize conventional recipes.  Simply replace the butter with a vegan alternative and use a non-dairy milk.  As for the egg substitutions, I posted about that recently on Veggie Grettie.

UPDATE –  I answered Kristie directly since her tea was approaching quickly.  She sent me a picture of the wonderful food she prepared for the tea along with the following message:

 I ended up serving the vegan classic cucumber tea sandwiches (thanks to Tofutti!) and the special pb&j.  I also served up vegan cupcakes with vegan chocolate frosting which was a big hit with the kids, including Kaya (the eldest, in the picture above). Thanks again for your inspiration!

BLUEBERRY PUDDING

I am a member of Dr. Fuhrman’s Member Center and as a member I receive daily recipes in the mail.  Dr. Fuhrman practices Nutritional Medicine and is a great resource for any of you wishing to learn more about the connection between nutrition and health.  I refer to his books as resources often.

A few weeks back I received a recipe for Berry “Yogurt” that looked so simple and refreshing (and mostly raw).  Somehow it has taken me weeks to get around to making this treat…a treat that literally took two minutes to make from start to finish.

Blueberries have been outrageously good lately (I can’t seem to get enough!) which motivated me to make this berry pudding with blueberries exclusively.  I decided that I wanted to go for more of a pudding than a yogurt and thus increased the flax meal to 4 Tbs. rather than 2Tbs.  The results were great!  Since my blueberries were sweet on their own, I did not add anything other than the dates.  If you tend to have a big sweet tooth, you may want to keep some stevia on hand in case you want the pudding to be sweeter.  I recommend blending it as written below and tasting it prior to adding any additional sweetener.

INGREDIENTS

2 cups blueberries, washed

¾ cups So Delicious Unsweetened Coconut Milk

4 Tbs. ground flax meal (I used Bob’s Red Mill)

4 Medjool dates, pitted

Place all ingredients in your Vitamix (or blender) and blend for approximately 1 minute.

Chill before serving.
