QUICK MEAL – My New Favorite!

I want to share with you my new favorite SUPER QUICK meal!  I have been eating this for lunch on a very regular basis lately.  This is definitely my new go-to healthy “get it all in one wrap” meal.

INGREDIENTS

1 whole grain tortilla

1/2 cup (packed) steamed Harvest Sensations Kale

1/2-1/3 cup Eden Organics canned beans (Great Northern, Black, Chickpeas, etc)

1/4 cup sliced cherry or grape tomatoes

2 Tbs chopped basil

2-3Tbs. Sabra Chipotle Hummus

I came across this hummus a few weeks ago and thought I’d give it a try.  It is one of my new obsessions.  Word to the wise…it is SPICY, but that is why I like it.  This hummus has so many applications.  I have been using it as a sandwich spread, mixed with beans and veggies (see above), thinning it and using it as a salad dressing.  I LOVE IT!

Wraps are just such amazingly easy meals.  For this wrap simply warm the tortilla and while it is warming mix together the tomatoes (slice in half), basil, beans, and hummus.

Once the tortilla is warmed lay down the steamed kale (spinach would work great here too…I would use it raw), and pour the bean/veggie/hummus mixture on top.  Yum!

What are your favorite wrap ingredients?

NO EGGS – How to Substitute

I consider myself a plant based eater and 99.9% vegan, however I do eat eggs about once a month and honey will cross my lips on occasion…those are the ONLY exceptions.  While I no longer have them, I used to be the proud caretaker of two very sweet chickens and I know that while with my family they led happy lives (and continue to do so on a farm with our friends) and were not being mistreated or exploited for their eggs.  My husband used to joke that we had the best fed and well taken care of chickens he could imagine…I would make their food (no buying prepared chicken food for me), and see to it that they got all of the good mango scraps, etc. Seeing as we did not have a rooster, the eggs were never destined to become baby chicks.

I believe it was this situation that made my daughter fall in love with eating eggs.  Fortunately for her health we learned that eggs do not love her.  It was this that forced me to find appropriate substitutes for eggs in her diet.

I know many of you are looking for appropriate egg substitutes.  Eggs are generally used either in baking or for eating straight-up.  Different substitutes work for different applications.

APPLICATION

SUBSTITUTION

Scrambled Eggs Crumbled firm tofu
Eggs for Quiche Regular or firm tofu
Egg Whites 1 egg white = 1 Tbs plain agar powder with 1 tbsp water. Whip together, chill and whip again
Baking Energ Egg Replacer (directions on box)
Flax eggs:1 egg = 1 Tbs. flax meal mixed w/3 Tbs. warm waterLet sit for approx. 8-10 minutes to thicken
  Salba meal: same directions
  Chia meal: same directions
1 egg = ¼ cup of mashed banana or applesauce
1 egg = ¼ cup blended silken tofu
  1 egg = ¼ cup non-dairy yogurt
For Loafs – need binding agent Bread crumbs, mashed potatoes, oatmeal, tomato paste – start with ¼ cup per egg and work from there.  You will need to play with the amount until you reach the right consistency

GUEST BLOG – Channa Masala by Anita Alamshaw

I am so excited about today’s guest blog.  I met Anita Alamshaw years ago through my sister-in-law.  She is such an amazing person as is the rest of her family.  Anita’s father, a Hematologist, came to the hospital to provide his expertise when my son was born and was sent to the NICU with a blood disorder (that he thankfully recovered from).  I have also called her husband (an MD) more times than I’d like to admit for medical advice.  The Alamshaw family is so giving.
I addition to being a mother and wife, Anita is Healthcare Executive and is passionate about health and cooking.  We both wish we lived closer to each other because she is in the kitchen experimenting and cooking just as much as I am.  I would love to be able to pop in for some Indian Cuisine cooking lessons.
When my sister-in-law was in town recently she went to Anita’s for a home cooked Indian meal.  She came home with a bag full of food for me to try and it was all so good.  I absolutely fell in love with Anita’s Channa Masala and asked her to share the recipe.  She has graciously agreed to allow me to share the recipe with all of you.  It is sooooo good.
INGREDIENTS
1-15oz Can of Garbanzo Beans
1 Medium Onion (chopped-small)
2 Tomatoes (chopped)
2 Cloves of Garlic (minced)
1t Whole Cumin seeds
1.5t Cumin powder
1t Coriander powder
.5t Turmeric powder

1t Cilantro (chopped) for garnish

Heat oil in pan (medium heat) then add: whole cumin seeds, onions, garlic.  Sauté until golden brown.

Add tomatoes to mixture and sauté until it cooks and becomes a nice gravy

Add garbanzo beans along with all remaining ingredients: cumin, coriander, turmeric, chili powder, salt, tomato paste, yogurt (optional)

Mix well, low-medium heat, cover and let simmer for 15 minutes

Garnish with fresh chopped cilantro

WHAT TO BRING TO BRUNCH?

This time of year screams “brunch.”  I am sure many of you went to Easter brunch and brunch for Mother’s Day.  I think brunch might be one of my son’s favorite words…I know it was mine when I was his age…so many choices!

When I am invited to someones home for brunch I usually volunteer to bring a large mixed fruit bowl.  There are a few reasons why I do this;  fruit is so good and sweet now, most people I know love fruit, I like to eat fruit in the morning, and if I bring a big platter of fruit I know I will have something to eat.

Many people are intimidated by hosting someone with a vegan diet.  If someone has gone to the trouble to invite us into their home,  they want us to enjoy ourselves AND have food we can eat, so why not take some of the pressure off of the host / hostess and bring a dish that is vegan and can be enjoyed by all of the guests?

The picture above is a mixed fruit bowl I brought over to our friend’s house for Easter Brunch.  I had my husband carry it in and he was shocked by how heavy it was.  The mixed fruit bowl contained a pineapple, watermelon, 6 mangoes, 4 bananas, red grapes, and 2 cantaloupes!  Shockingly there really wasn’t that much of it left after the party.

I’d love to hear from you…What dish do you offer to bring when you are invited to someone’s home for brunch?

PRODUCT REVIEW – O.N.E. Coconut Kid’s Drinks

When I went to the Natural Products Expo West I was so excited to see that O.N.E. created a drink for the kid’s lunchbox market called O.N.E. Kids.  I was given samples of the Apple, Fruit Punch, and Orange flavored drinks.

My kids and I sampled the drinks this week and here are our results:

Orange (tested by me) – In my opinion it tasted like pastuerized OJ.  Some people love that taste, but I am more of a fresh squeezed OJ kind of gal.

Apple (tested by my 5 year old daughter and sipped by me) – The apple flavor was definitely subtle.  I could learn to like this flavor.  Unfortunately my daughter didn’t like it.

Fruit Punch (sampled by my almost 10 year old son) –  I sent him to school with the fruit punch flavor in his lunch box.  He is usually a fan on fruit punch flavored drinks and when he came home I asked him how he liked it and he declared, “it wasn’t good.”

Bummer.  I so wanted these drinks to knock it out of the ballpark because I am a fan of coconut water for it’s health benefits.  I am a fan of O.N.E.’s other coconut waters and do buy them regularly.  I love drinking them post workout.

FOOD POISONING – Top 10 Sources

On April 28, 2011 the University of Florida’s Emerging Pathogens Institute released information regarding the top 10 sources of food borne illnesses.  The hope is that those in charge of protecting us from such food borne illnesses will use the information to help prevent outbreaks.  Unfortunately to date their efforts have not been coordinated and thus are not as effective as they could be.

According to Michael Batz, who is the main author of the report, “Government agencies must work together to effectively target their efforts. If we don’t identify which pairs of foods and microbes present the greatest burden, we’ll waste time and resources and put even more people at risk.”

Currently the top 10 food pathogen combinations are responsible for economic losses of 8 billions dollars annually from lost work days, medical costs, and severe disabilities caused by illness.

Here are some of the highlights pulled directly from the report:

  • POULTRY contaminated with Camplylobacter bacteria topped the list, sickening more than 600,000 Americans at a cost of $1.3 billion per year.
  • Salmonella in POULTRY also ranks in the Top 10, with $700 million due to costs of illness.
  • Salmonella is the leading disease-causing bug overall, causing more than $3 billion in disease burden annually.
  • In addition to POULTRY, Salmonella-contaminated PRODUCE, EGGS and multi-ingredient foods all rank in the Top 10.
  • Four combinations in the Top 10 – Listeria in deli MEATS and soft CHEESES, and Toxoplasma in PORK and BEEF – pose serious risks to pregnant women and developing fetuses, causing stillbirth or infants born with irreversible mental and physical disabilities.

While a vegan diet is not immune to food poisoning, I found it interesting that 8 out of the 9 foods mentioned were animal based foods with poultry mentioned 3 times…4 if you count eggs.  We can drastically reduce our exposure to these food borne illnesses by simply eliminating our consumption of animal based foods.
