DAIYA SLICED CHEESE WEDGES – Natural Products Expo West

Yeehaw!!!  Daiya is coming-out with sliced cheese…this is going to make grilled cheese A LOT less messy.

I am going to be attending the Natural Products Expo West this coming weekend and just received an e-mail from Daiya that they will be debuting these cheese slices at the Expo.   Here is what they had to say…

Q & A WITH DR. McDOUGALL – Low Cholesterol

When I attended the Healthy Lifestyle Expo back in October, I had the opportunity to ask Dr. McDougall a question.  I thought you might enjoy reading his response.  My friend Sirica taped the response for me with my iPhone, so I have written it word for word.

GRETCHEN – My doctor is really supportive of my vegan diet, however with my latest blood work my cholesterol was 130.  My doctor was telling me that she was concerned that my cholesterol was too low (Audience laughed).  How do you approach your doctor when they want you to raise your cholesterol?  She said she has seen problems with cholesterol that is so low.

Dr. McDougall (Smiling ear to ear) – Well, has she really?!?!?!  I would ask where those problems are because I have been at this for 43 years and I have never seen any.  Certainly sick people, say you have cancer, you don’t eat, your cholesterol goes low, but, the cause and effect is clear there.  

Unfortunately your doctor, although probably well meaning, has no experience or education on the effect of diet and cholesterol and I really know this from her statement.  As I said, I have been at this for 43 years, and now people who get sick, say you get cancer or severe heart failure, you get so sick you don’t eat, and when you don’t eat your blood cholesterol will go down just because you don’t eat, and that is where the association comes from…sick people don’t eat and their cholesterol goes low.

If you eat a healthy diet and your cholesterol goes low, that is a completely different relationship, and that is ALWAYS helpful.  I generally recommend a cholesterol less than 150 mg/dl, but I RARELY put somebody on cholesterol lowering medication if they can’t achieve that by diet alone.  

So, I think that is something you can look at as a big “A” on your report card if you have a cholesterol of 150 or less.  

I wouldn’t change doctors because of this one error in understanding.  This doctor probably has a lot to offer.  I would make a small attempt to educate the doctor, just see if she is interested, if not, ya know.  Use professionals for what they do well.  If you are going to have a baby, you want a doctor who is a good catch (laughs), you want a surgeon who is an artist.  You don’t really care if that person smoked a cigar a 1/2 hour before they walked into the operating room, you want somebody who is an artist.  

It looks like you are not looking for a doctor who will tell you to eat a healthy diet or what that diet is, because you already know that, you don’t need to hear it from a doctor.  You just need them for the services that they will provide and doctors have some really specialized skills that you ought to take advantage of, but the skills of knowing what a human being ought to eat have somehow never gotten into the curriculum.  That just never happened and it just blows me away.

My son is finishing his last year of internal medicine residency and some of you may know I am a professor at Touro University Medical School and the student don’t know, they have no idea and neither do the professors.  The students care, the professors are threatened by the fact that they may not know something as crucial as what a human being eats.  I mean, what a question (he is giggling)?  

Anyway, did I answer your question?

Yep…he did.  It was amazing to be able to ask Dr. McDougall this question and hear his answer.  I had a pretty good idea from reading the literature that I was healthy with a cholesterol of 130, but I wanted to have some more facts and specifics to be able to go off of.  Hearing that the low cholesterol / unhealthy connection was usually a factor of being REALLY sick and not eating made me feel a lot better.

I have so much respect for Dr. McDougall.  I think I first read one of his books when I was in high school, so being able to personally ask him a question was an absolute thrill.

DOUG LISLE – Q & A

As promised, here is the Q and A that followed Doug Lisle’s Pleasure Trap presentation  (click HERE for my recap of his presentation).  Doug has some great suggestions and insights.

The questions below are written exactly as they were asked.

QUESTION – When everyone around you is eating crap, how do you stay on track?

When you go to drug rehab, everyone supports you and it is acceptable to make the decision to stay away from old friends and bad influences.  The same does not hold true when you are trying to kick your food addictions.  While food addiction is not as potent as drug addiction, it can actually be a harder habit to kick because there is generally very little support and it is not acceptable in our society to distance yourself from people merely because they are bad food influences in your life.

I suggest you tell people you are conducting an experiment.  Tell them that you read a book that makes sense to you, so you are going to give this way of eating a try.  Be humble and tell people that it is probably just a wacky idea and may be wrong (that takes people off their guard), but you want to try it.

QUESTION – If you have eaten a lot of crap in your life, are you more susceptible to being sucked back into eating the crap?

We will never know because we have ALL been exposed.

QUESTION – Since we naturally want to conserve energy, how do we add exercise into the equation?

Some people like to exercise hard (though not most people) and some people like to do social exercise.  For most people, in order to stick with exercise, there has to be an additional benefit from the exercise (i.e social interaction).

QUESTION – How do you get children eating healthier and more plant-based?

I only really care about dairy.  They have plenty of years to see the light later, because they generally won’t end-up with cancer or heart disease until their 20s.

Dairy is a HUGE proponent of auto-immune disease and can make children very sick (He mentioned that some children have a 1 in 16 chance of getting diabetes…THIS is what I found when trying to research that statistic).

They can choose their later life, but we choose this for them and it’s not fair for us to choose the possibility of auto-immune diseases for them.

ARE YOU READY FOR SOME FOOTBALL???

I am not very versed in football.  That may not seem unusual or sad to you until you learn that I was a songleader from 7th grade through my Junior year of high school (Why am I always so embarrassed when I admit that?).  It is really criminal how little I know about the actual rules of the game.  Shouldn’t they have taught us the rules at one of the gazillion cheerleading camps I attended?

All I can say is thank goodness for Lisa Bognanno!  That girl knew the game…I mean she REALLY knew the game.  Without her we would have been stuck up there on our stools yelling out generic offense or defense cheers exclusively.  Enjoy the game Lisa (I am sure she will actually be watching the game).  I on the other hand am really looking forward to the commercials, though truth be told I do wish I understood the game!

Confessions aside, the food is always really fun at Superbowl parties, though usually not vegan…yay for guacamole!  On New Years day I made a spread for us to nosh on that would be perfect for game day.  I didn’t even plan on photographing it, but my sister-in-law forced my hand and now I am glad she did.  These pictures would have been much more “artsy” if I actually planned on taking them (and I probably would have removed the paper towels from under the strawberries!), but I guess this gives you a real glimpse into our home and what I serve when we have private occasions.

I made chocolate fondue (recipe to follow in a later post) which I served with fresh fruit (strawberries, bananas, cut apples, and sliced pear) and a 7 layer dip (which was technically 6 layers).

For the layered dip I used (listed bottom layer to top):

  • Amy’s Organic refried black beans (my favorite refried bean)
  • My vegan queso (click HERE for recipe)
  • Homemade guacamole (made with my salsa fresca)
  • Tofutti Sour Supreme
  • Salsa fresca (click HERE for recipe)
  • Sliced black olives
  • NEXT TIME I WILL MAKE A 7th LAYER WITH CHOPPED CILANTRO

This layered dip was seriously enough to feed an army.  I am not sure what I was thinking, but the left-overs made awesome taco salads for days.

I served the dip with different chips (baked tortilla, regular tortilla, and TJ’s corn chip dippers) and crudites.  Personally I prefer to eat it with the sliced veggies (celery being my favorite for this), but I also do like baked tortilla chips.

SABRINA NELSON’S BERBERE STEW

Last year I attended the Healthy Lifestyle Expo.  Jeff and Sabrina Nelson (of VegSource) founded the Healthy Lifestyle Expo as a means to share the health benefits of a plant-based lifestyle.  Through plant-based eating Sabrina has been able to overcome significant health challenges (click here for her inspirational story).  The Nelson family has done so much to educate others and to further exposure for this way of life.

The last morning of the Healthy Lifestyle Expo began with cooking demonstrations and Sabrina shared her recipe for Berbere Stew.  I was struck by the simplicity of this one pot meal and how tasty it was.  Needless to say I have been eating a lot of Berbere Stew since returning from the conference.  The BBQ sauce makes it taste like baked beans and it is soooo good over brown rice.

I happen to like the Berbere spice, but if you are unsure how your children will react to it, make a batch without it and go from there.

INGREDIENTS

2 ½ cups red lentils
2 jars Muir Glen Portobello Mushroom Sauce (or other fat free, low sodium pasta sauce)
2 empty Muir Glen bottles worth of water
½ cup BBQ sauce of choice
1 Tbs Berbere spice (Sabrina’s favorite Berbere spice is available here.)
2 cloves of garlic, minced

Pour all of the ingredients into a rice cooker.

Press button to cook on “brown rice” setting.

Sabrina uses the Zojirushi rice cooker which takes about 90 minutes to finish cooking, and then it automatically goes into a “warming” setting.

The stew actually improves over time and tastes even better the second day when the flavors have had time to intensify.

DOUG LISLE RECAP

The event with Dr. Doug Lisle today was truly eye-opening.  I first heard Dr. Lisle speak when I was going through the process of getting my certification through Cornell and he was one of the Guest Professors.  His lecture on the Pleasure Trap was absolutely engaging and one of the most interesting and insightful lectures I had heard to date.  He presented that lecture again today and it was every bit as interesting the second time around.

Seeing as it is after midnight here as I type this (thus excuse any typos), I will give you the quick recap because I want you to have the information…it is that important.  Having this background information is KEY to understanding WHY our nation is experiencing unprecedented weight / health problems.  First and most importantly you need to understand this one piece of information:

IT IS NOT YOUR FAULT.  IT IS NOT A WILLPOWER ISSUE.  THERE IS NOTHING WRONG WITH YOU.

THE PLEASURE TRAP

Why is it that once you know what to do it is so hard to do?  Let’s get into some evolutionary psychology.

We run on instinct and all being’s instincts are to eat, survive, and reproduce (I think Dr. Lisle chose the right profession…he was not destined to be an artist, but I love the self-deprecating humor within which he shares his art!).

While each animal has their own nature, we all have the same Motivational Triad.  We are all hard-wired to unconsciously make decisions using this triad.  By nature we seek out pleasure, try to avoid pain, and attempt to do both by expending as little energy as possible (i.e. fish swim in schools to draft off one another and conserve energy).

The PLEASURE TRAP occurs when you take someone and put them into an environment they were not designed to handle.  FOOD is now the #1 pleasure trap.

The slide above lists the most popular foods at present time.  What do all of them have in common?  Sugar, fat, and salt…foods that we were DESIGNED to seek out.  These processed foods have a much higher caloric density than whole unrefined foods.  These calorically dense foods are much more attractive to us biologically because they support the Motivational Triad by giving us pleasure, quickly eliminating the natural anxiety that accompanies hunger, and by being so calorically dense they give us the biggest bang for our buck which supports our biological need to conserve energy.

Obviously we all know that junk food is not good for us, but another detrimental effect of eating junk food is that we quickly become addicted to it.  When we eat this food it definitely does trigger a pleasure response in our brain, however that pleasure response deafens with time and the same exact junk food does not taste as good to us as it originally did which makes us want/need a little bit more (i.e. During the holidays did you walk into a home with a fresh Xmas tree and notice how wonderful it smelled [stage II] and then notice that within 15 minutes you barely smelled it anymore [stage III]???  Your senses were dulled).

When it comes time to try and eliminate junk food aka the Evil Triad of fat, sugar, and salt from your diet, you are going to go through a painful withdrawal (stage IV)…whole unrefined foods are not going to taste very good to you initially since your senses were dulled.

Fortunately if you understand this process you can expect it and push through to stage V where your body has adjusted to the healthier food and truly likes it.

One of Dr. Lisle’s quotes was so powerful, “(When it comes to food) If you do the wrong thing it feels right and when you do the right thing (after having been doing the wrong thing) it feels wrong.”

Dr. Lisle did have a few suggestions to help you power through from stage IV to stage V:

  • Fast
  • Juice
  • Go to jail

When he jokingly refers to jail, he is referring to going to a center such as True North or Dr. McDougall’s Health and Medical Center in Santa Rosa.  These are medically supervised health centers that can really shock your systems into health in the most efficient ways.

All of the above three methods take your fat, salt, and sugar receptors offline and essentially resets them.

HOW TO LOSE WEIGHT WITHOUT LOSING YOUR MIND

According to Dr. Lisle, there are only three species on the planet with weight problems:

1.  Dogs

2.  Cats

3.  Humans

It is troubling that all three of those species are primarily found within our homes and are fed by us.

Conversely, even in NATURE when food is abundant, animals still do not get fat.

Dr. Lisle made a point of debunking the slide above stating that weight problems are NOT because of psychological issues, but did emphasize that weight problems can CAUSE psychological issues.

Many people believe that we all got so heavy by eating large volumes of food, but Dr. Lisle basically broke it down to the fact that we are eating food that is too calorically dense (i.e. we could all easily eat four pieces of bread, but we could NOT as easily eat 4 cups of brown rice).

He believes that the leading cause of weight gain is oil.  Apples are 300 calories a pound.  Oil is 4000 calories a pound.  They did a study and gave women 500 calorie plates of pasta and vegetables.  There were two groups of women and both received the same plates of pasta and vegetables, however one of the groups had 300 calories of oil added to their plate for a total of 800 calories.  BOTH groups of women reported the same amount of fullness after the meals!  It was as if the oil went unnoticed!!!

Another interesting statistic is that between the ages of 20 and 40 women gain about 1 pound per year.  NOT by massively overeating, but by systematically eating a LITTLE too much (see example above).

It has been some time since the developed world has eaten food in its natural habitat.  We have been eating food that has been chewed by steel jaws (grain processed into flour) before it even gets into our mouths, processed oils instead of olives, and sugar instead of fruit.

The most powerful quote of the entire presentation in my opinion was this:

“If you are overweight you are eating foods that are too concentrated.  Simple as that.”

Eat an appropriately calorie dense diet of whole unprocessed food and your body will take you where you need to be…you do not need to try and consciously eat less.

In fact, trying to deprive yourself of the proper volume of food will lead you to problems in that your biology will kick in and push you to seek those calorically dense (fat, sugar, salt) foods that we need to avoid.  YOU MUST NOT GO HUNGRY or you will set yourself up for failure.

By eating less calorically dense food you are literally able to fill-up your stomach which will signal your brain that you are full and that your nutrient needs have been met.

There are strategies you can follow to assist yourself even further.  Dr. Lisle suggests you eat in the following order:

You don’t need to be perfect to overcome your weight problems.  Dr. Lisle coached a woman who was approx 350 pounds and the ONLY change she made was to have oatmeal for breakfast.  In one year she lost 70 pounds!!!

While our biology means that we will always have to look over our shoulders a little bit, knowing WHY and understanding WHY helps us conquer those issues in today’s modern world of excess.

THE BIG WASTE

The Food Network is airing a special called The Big Waste this Sunday (1/8) night and I am really psyched to check it out.  We have a HUGE problem in this country when it comes to wasted food.  The premise of the show is that two all-star teams comprised of famed chefs Bobby Flay, Michael Symon, Anne Burrell and Alex Guarnaschelli compete with only 48 hours on the clock, to create full-scale menus of the caliber people have come to expect from them, but the catch is that they can only use food that is destined for the landfill!

According to the Food Network:

“The chefs’ hunt takes them from grocery aisles to produce farms, and orchard lines to garbage piles, as they attempt to source enough ingredients to feed a gathering crowd.  Bobby and Michael square off against Anne and Alex, as they challenge their views of food waste and how and why it is created.”

While I am guessing the meals will include animal products, I really like the concept of the show and how it will highlight the waste problem in today’s world.

DOUG LISLE EVENT – How To Lose Weight Without Losing Your Mind

One of the superstars of healthy living, Doug Lisle PdD, is coming to Los Angeles on January 8, 2012, and you can hear him!

The topic of this talk is “How to Lose Weight Without Losing Your Mind.”  This is a presentation you absolutely want to hear, if you can attend (I will be there and would love to meet you).

Dr. Lisle is the psychologist for the McDougall Wellness Program as well as True North Health.  He is the co-author of the bestseller, The Pleasure Trap, and a highly entertaining speaker.

The event takes place from 2pm to 5pm on Sunday, January 8, at the South Bay Adventist Church in Redondo Beach, CA.  Food at the event is catered by Chef AJ.

HEALTHY TASTE OF LA 2 – Recap

I attended the 2nd annual Healthy Taste of LA for the first time last month and was very impressed!  The keynote speaker at this year’s event was T. Colin Campbell.  Being the nutrition geek that I am, I will forever be indebted to T. Colin Campbell for the work he has done in the field of nutrition and the discoveries he has made throughout his career pertaining to nutrition and its role in cancer and other diseases of affluence.  It was great to have a few minutes to chat with him about nutrition in general and the plans he has with regards to evolving the Plant-Based Nutrition Certification courses at Cornell.

It was a packed day of amazing healthy cooking demonstrations (NO OIL, SUGAR, OR SALT) by Chef Ramses Bravo of True North, Chef Eric Tucker of Millenium, a live taping of The Chef and The Dietitian, a motivation speech by fitness guru John Pierre (Ellen’s Personal Trainer), more cooking demonstrations by Ann Gentry (pictured with me above) who is the founder of Real Food Daily, Chef Eric LeChasseur of Seed Bistro, and Lindsay Nixon the author of the Happy Herbivore.

Fortunately for us we also had three breaks throughout the day where we were given the opportunity to sample all of the wonderful food that the Chefs demonstrated making.  Another exciting aspect of the day was the fact that the event organizers were short one staff photographer and asked me to fill in which basically gave me an all-access pass to move around and take pictures to my heart’s content!

The first recipe that was demonstrated at the event was Chef Ramses Bravo’s Coconut Vanilla Granola, which is the Granola that they serve at the True North Health Center.   After the event I went home and made the granola and was really impressed with the result.  I had never made granola without oil before and love that I now know how.  Click HERE for the recipe.

At the end of the event Chef AJ announced that the keynote speaker at next year’s Healthy Taste of LA 3 will be Dr. Caldwell B. Esselstyn, the man who has figured out the formula to be heart attack proof (Did you all see Dr. Sanjay Gupta’s CNN special by the same name highlighting Dr. Esselstyn?)!!!

I definitely plan on being there at the event next year (November 4, 2012).  I HIGHLY recommend purchasing your tickets in advance.  This year they had to turn people away from the event because the interest was so high.  Do yourself a favor and purchase your tickets ahead of time.
