HOLIDAY GRANOLA TEACHER GIFTS

I know many of you may be scrambling right now to come-up with gifts for your children’s teachers and the coaches in their lives.  Our family really values the people who help us shape our children and this year we decided to make them homemade holiday gifts.

Granola has always been a favorite in our home, so we decided to share some of our favorite granola (click HERE for the recipe) with the special people in our lives.  My daughter helped me make the granola and I was very thankful for her help because we made a TON!!!  We made 4 double recipes and luckily it was the right amount…isn’t it funny how things have a way of working out?

We made 24 gifts (each in a 1 quart Ball mason jar).  As a bonus this ended-up being a wonderfully inexpensive project with each gift costing between $5-6 plus our time.  Time well spent.

GUILT-FREE VEGAN MOCHA FUDGE

I always have fudge on the mind during the holidays.  When I was a kid our across the street neighbor always made fudge for the holidays and I was probably single-handedly responsible for eating most of it (I should probably apologize to my family for that!…Better late than never).

I have been working on this black bean based recipe for a while now and think that I have finally come-up with a suitable guilt-free substitute for fudge.  The funny thing is that this fudge doesn’t take on the texture of fudge until after it has been baked and then put in the fridge overnight.  Something magical happens in the fridge.

Keep in mind that the texture of this fudge will not be as smooth and creamy as “real” fudge, but it also does not have all of the sugar, fat, and cholesterol (i.e. GUILT) of said fudge.

This is my new favorite dessert recipe and I have been consuming A LOT of it lately.

INGREDIENTS

14 dates
1/3 cup nut butter (cashew and peanut work well)
4 oz jar baby-food prunes
2 Tbs. Organic Decaf freeze dried coffee crystals
2 Tbs. hot water
50 drops (approx 2 dropperfuls) or Vanilla Crème liquid stevia
2 Tbs. flax meal
 
15 oz. can sodium free black beans, rinsed
1/2 cup + 1Tbs. cacao powder
1/3 cup almond flour

Dissolve the coffee in the hot water.  Place the dates, nut butter, prunes, coffee mixture, stevia, and flax meal in the food processor and process until very smooth.  You will need to stop the processor and scrape down the sides with a spatula several times during the processing.

Once the above mixture is smooth add the black beans, cacao powder, and almond flour to the mixture.  Again process until smooth scraping down the sides as needed.

Pour the fudge mixture into a very lightly oiled 8 x 8 pan, spread the mixture evenly, and bake at 225 degrees F for 45 minutes to 1 hour.

Cool and then refrigerate overnight.  You can either cut the fudge into bars and then refrigerate or refrigerate the pan and cut the fudge into squares after refrigerating.

I store my fudge in a Glasslock container in the fridge and stack each piece on it’s cut edge to help prevent  sticking.

PRODUCT REVIEW – Earthbound Farms PowerMeals and FREE eCookbook

Earthbound Farms recently sent me samples of their new PowerMeals.  For those of you unfamiliar with Earthbound Farms, they practically invented bagged salad in 1986 and have turned that invention into an empire of goodness (click here for their story).  While we are all capable of buying lettuce, washing it, spinning it, etc., let’s face it; we all probably wouldn’t eat as much salad if it weren’t for the fact that we can go buy a bag of it ready to go.  I know I buy it more often than I’d like to admit purely due to the convenience factor.

PowerMeals are basically bagged salad on steroids and they come in three flavors:

  • Blueberry Quinoa Protein Balance (Gluten-free)
  • Tomatillo Black Bean Protein Energy (Gluten-free)
  • Cranberry Wheat Protein Boost

I took the PowerMeals with me on a recent vacation and they really saved me in the sense that I knew I had healthy meals options with me to fill in the gaps when it would have otherwise been easy to choose a less healthy option.  They were heaven-sent!

My only criticism of the PowerMeals is that the dressings that come along with the salads are too high in fat (Total fat of the salads with the dressing ranges from 21-23 grams), but that is easy to remedy by bringing your own dressing which is what I did.

In celebration of their 25th year in business, Earthbound Farms is offering Veggie Grettie readers a free eCookbook, Salads for Every Season, which is available for download now through 12/31 afterwhich it will cost $2.99.  In their own words:

PRODUCT REVIEW and GIVEAWAY – PlantFusion

PlantFusion is my absolute favorite vegan protein powder.  Their products taste amazing and on top of that they have:

HEALTHY AQUARIUM LUNCH – How to Substitute

Recently my kids had the day off of school and I surprised them by taking them to the aquarium for the day.  Our family has always loved going to the aquarium and we are very fortunate to live near the Aquarium of the Pacific in Long Beach.

My kids have a weird fascination with cafeterias and get so excited to eat lunch at the aquarium’s cafeteria, Cafe Scuba.  When I looked at the menu there really wasn’t anything I was excited about eating as displayed on the menu (a lot of fried, mayonnaise, and meat-based dishes), but there was a wrap that I thought might work if the chefs were willing to substitute out some ingredients.  The wrap had chicken and feta cheese in it along with a balsamic vinaigrette, which wasn’t going to work for me and the side that came with it was a mayo-based pasta salad.  When I got to the front of the line I asked if they were willing to make some substitutions and they were VERY accommodating.  The chef that serviced us found some grilled asparagus and red onions, tomatoes, and spinach for the wrap.  When I asked if she could sub out the pasta salad for me she was very willing to provide me with a green salad in lieu of the pasta salad.

My meal was very tasty.  I dished-up some yellow mustard on the side and dipped my sandwich in it and dressed the salad with some lemon juice.

Remember, don’t be afraid to ask for what you want (very nicely of course).  I find that the vast majority of the time people are more than willing to help…they ultimately want you to be happy with your meal which means that it is very possible to eat healthfully almost anywhere.

HEALTHY TASTE OF LA 2 – Recap

I attended the 2nd annual Healthy Taste of LA for the first time last month and was very impressed!  The keynote speaker at this year’s event was T. Colin Campbell.  Being the nutrition geek that I am, I will forever be indebted to T. Colin Campbell for the work he has done in the field of nutrition and the discoveries he has made throughout his career pertaining to nutrition and its role in cancer and other diseases of affluence.  It was great to have a few minutes to chat with him about nutrition in general and the plans he has with regards to evolving the Plant-Based Nutrition Certification courses at Cornell.

It was a packed day of amazing healthy cooking demonstrations (NO OIL, SUGAR, OR SALT) by Chef Ramses Bravo of True North, Chef Eric Tucker of Millenium, a live taping of The Chef and The Dietitian, a motivation speech by fitness guru John Pierre (Ellen’s Personal Trainer), more cooking demonstrations by Ann Gentry (pictured with me above) who is the founder of Real Food Daily, Chef Eric LeChasseur of Seed Bistro, and Lindsay Nixon the author of the Happy Herbivore.

Fortunately for us we also had three breaks throughout the day where we were given the opportunity to sample all of the wonderful food that the Chefs demonstrated making.  Another exciting aspect of the day was the fact that the event organizers were short one staff photographer and asked me to fill in which basically gave me an all-access pass to move around and take pictures to my heart’s content!

The first recipe that was demonstrated at the event was Chef Ramses Bravo’s Coconut Vanilla Granola, which is the Granola that they serve at the True North Health Center.   After the event I went home and made the granola and was really impressed with the result.  I had never made granola without oil before and love that I now know how.  Click HERE for the recipe.

At the end of the event Chef AJ announced that the keynote speaker at next year’s Healthy Taste of LA 3 will be Dr. Caldwell B. Esselstyn, the man who has figured out the formula to be heart attack proof (Did you all see Dr. Sanjay Gupta’s CNN special by the same name highlighting Dr. Esselstyn?)!!!

I definitely plan on being there at the event next year (November 4, 2012).  I HIGHLY recommend purchasing your tickets in advance.  This year they had to turn people away from the event because the interest was so high.  Do yourself a favor and purchase your tickets ahead of time.

CHARITY SPOTLIGHT – Pajama Program

~ Delivering warm sleepwear and nurturing books to children in need ~

In the spirit of giving every year my daughter’s school hosts a Pajama Program pajama drive.  This time of year it is especially important to help those in need.  While toy drives are absolutely fantastic and I am sure such a comfort to parents who are not able to provide their children with gifts, sometimes we forget that there are MANY children who do not even have basic necessities such as pajamas and books.

I appreciate the fact that schools host charity drives since they provide us with an opportunity to talk to our children about helping those less fortunate than us.  While my parents did a wonderful job providing for my sister and I growing-up, they both worked in careers that provided services to the community (a police officer and teacher) and thus were not high paying, so money was tight.  Despite this, EVERY year my parents adopted a family and provided their Christmas gifts for them.  I will forever appreciate the fact that my parents instilled in us the knowledge that it is our duty as humans to help one another.

PAJAMA PROGRAM

Ten years ago, one New York woman noticed children in shelters and group homes sleeping in their clothes because they didn’t own even one pair of pajamas.  She filled a shopping bag with new sleepwear and books and began to hand them out to the youngsters, many of whom were abused, abandoned or neglected.  Her non-profit Pajama Program marks its first decade of service in 2011.  The celebration kicks off this fall with a series of events beginning October 1, 2010.

Since its inception, the organization has provided more than one million new pajamas and new books to children across the country, operating 79 chapters in 42 states throughout the U.S. The program serves children in need living in group homes and shelters.  Most have never enjoyed the simple comfort of having a parent tuck them in at bedtime with warm, clean pajamas and a story.

Pajama Program’s mission becomes more urgent during the period it identifies as “Danger Season” when the thermostat dips and the harsh winter months settle in.  Starting October 1, Pajama Program works hard to heighten the public’s awareness of the need to keep these at risk children in warm, clean nighttime clothing and with a bedtime book to allay their fears.

“For so many needy and abused children, winter means endless cold and scary nights,” explains Pajama Program founder Genevieve Piturro. “The winter season is a particularly critical time when these children are most vulnerable to serious colds and illnesses. Warm, clean pajamas help to protect them against night chills and harmful conditions. Emotionally pajamas are a hug for children who feel lost and alone.”
