The theme of my food life lately has been “simplify.” Complicated cooking hasn’t made its way into my kitchen for a little while because my body has been craving the basics.
And…the kids have been busy and we have been going in a million different directions, so this is the system I have found that makes it easy for me to be where I need to be with the kids and still eat nutritiously.
1-2 times per week I have been steaming a mass of veggies to keep in the fridge and that has generally been lunch for me along with some hummus.
I have also been making a big pot of soup and keeping that in the fridge for dinner.
That doesn’t mean I don’t want a treat from time to time.
I had an appointment with Dr. Galitzer today (I go every 6 weeks for a tune-up) and while I was receiving an Ondamed treatment I was looking through Pinterest on my phone. I came across a Pin for stuffed raspberries that I have seen before and it sounded so good to me in the moment.
On the way home from my appointment I stopped at Mother’s and bought some carob chips to go along with the gorgeous organic raspberries already in my fridge and within moments of walking through my door I was popping some of these goodies in my mouth.
These little treats definitely fall within my recent theme of simple…simply pop a carob (or chocolate) chip in the opening of the raspberry and then pop it in your mouth.
Perfection.
