WHAT TO BRING TO BRUNCH?

This time of year screams “brunch.”  I am sure many of you went to Easter brunch and brunch for Mother’s Day.  I think brunch might be one of my son’s favorite words…I know it was mine when I was his age…so many choices!

When I am invited to someones home for brunch I usually volunteer to bring a large mixed fruit bowl.  There are a few reasons why I do this;  fruit is so good and sweet now, most people I know love fruit, I like to eat fruit in the morning, and if I bring a big platter of fruit I know I will have something to eat.

Many people are intimidated by hosting someone with a vegan diet.  If someone has gone to the trouble to invite us into their home,  they want us to enjoy ourselves AND have food we can eat, so why not take some of the pressure off of the host / hostess and bring a dish that is vegan and can be enjoyed by all of the guests?

The picture above is a mixed fruit bowl I brought over to our friend’s house for Easter Brunch.  I had my husband carry it in and he was shocked by how heavy it was.  The mixed fruit bowl contained a pineapple, watermelon, 6 mangoes, 4 bananas, red grapes, and 2 cantaloupes!  Shockingly there really wasn’t that much of it left after the party.

PB BANANA BITES

Snacks don’t need to be complicated.  One day last week my kids came home from school and were greeted by the snack you see pictured above.  Both my son and daughter loved it!  They were so excited by how “fancy” these PB Banana Bites were and I was so excited about how easy it was to prepare.

Simply spoon some peanut butter (approx 2 Tbs. per large banana) into a piping bag and pipe away.  I find that this is a less messy and much less time consuming way to make this snack than my old method…spooning PB onto each piece of banana.

My kids also love to eat this snack with almond and cashew butter.  A super special decadent treat for them is to make this snack with Justin’s line of chocolate nut butters…yum!  I love to use their Chocolate Hazelnut Butter as a vegan Nutella substitute.

JACKPOT – All Hail Kale

I feel like I hit the jackpot…let me explain.  At the moment my favorite restaurant meal is the All Hail Kale salad at Veggie Grill with grilled (not blackened) tempeh.  The other day I was craving it and thought, “Why not Google ‘All Hail Kale Veggie Grill Recipe?'”  Well, what do you know…the recipe was on the web!!!!!!  JACKPOT!!!!  It looks like preparing this salad is a bit involved, so I will still buy it when I go to Veggie Grill, but I am so excited to make it for BBQs and parties this Spring and Summer.

Since obviously we at GardensToTables are big fans of using the plants we grow or get at the farmers’ market to their highest potential, we talked to Ray White, operating partner and “grillin’ guru” for The Veggie Grill, and he was kind enough to share the recipe for their very popular All Hail Kale. I myself had never done any research into the founders of Veggie Grill, so when I saw this post I decided to Google Ray White.  I found a very interesting interview of Ray on Behind the Food.  Who knew that Ray White and Tanya Petrovna started Native Foods together???  To read the interview click here.

Without further ado, here is the recipe…

~

INGREDIENTS – serves 8

6 bunches kale
2 cups quinoa, cooked
2 cups corn salsa (recipe below)
2 cups red cabbage
8 oz walnuts
3 cups Ginger Papaya dressing

Ginger Papaya Vinaigrette (1 1/4 quarts)
1 oz fresh ginger root
1 cup lime juice
1 ½ cups fresh papaya
½ cup rice vinegar
1 Tbs. sea salt
3 cups canola oil
1 ¼ cups evaporated cane juice

Corn Salsa (1 quart)
8 cups Roma tomatoes
1 cup red onion
½ cup cilantro
1 cup roasted corn
2 tsp sea salt
1 tsp black pepper
2 oz. lime juice

Kale:

Remove spines from kale and chop into 1″ squares. Rinse kale in cold water and  dry. Place kale in 3″ rectangular container add dressing and Quinoa, toss thoroughly, make sure all kale is coated. Refrigerate overnight

Ginger Papaya Vinaigrette:
                   
Peel ginger root and papaya, combine with all ingredients to blender (except oil) blend until smooth. Slowly drizzle oil while continuing to blend until dressing emulsifies, add to container and refrigerate

Corn Salsa:

Chop cilantro, in large bowl combine all ingredients and mix well

Finished Kale Salad Procedure:

To prepare salad add 4 cups marinated kale to plate, swirl 2 ozs raw chopped cabbage around kale, topped with 2 ozs corn salsa, 1 oz walnuts and drizzle 2 ozs dressing topped with shredded carrot

GUEST BLOG – Kristen Suzanne on Protein Powder

 Today we have another guest post by Kristen Suzanne of Kristen’s Raw.  Overall I like to have my diet consist of whole foods, but I do have a place in my diet for raw vegan (soy-free) protein powders.  Here is what Kristen has to say about the issue…

Protein powders get mixed reviews from people. There are some people who don’t care for protein powders because they say they’re a “fractionated food” (i.e., not a whole food). There are other people, however, like me, who are grateful they exist. Some raw peeps love them because they want more protein in their diets to support their intense exercise regime (such as my husband, Greg, and Robert Cheeke vegan bodybuilder). Other people, like me, love them when pregnant or breastfeeding for that easy extra protein. But, that’s not the only reason I like them…

When I’m eating an all raw diet (breastfeeding, pregnant, or not), I find that there are times that I want something to eat that is not high carb or high fat. A lot of raw foods are either one of those two options. Sure, I could gnaw on some plain romaine or cucumbers, but it’s not going to really fill me up or fill this unique need I’m describing. I’m talking about those times that I feel a need for something substantial and filling, but that is not high fat (there goes nuts) or high carb (sorry, fruit). I’m not sure if you’ve ever experienced that when eating all raw, but it’s something that happens to me from time to time. So, how do I handle it? I drink a protein shake. And, it’s exactly what I need!

Now, I realize that some people just have a hard time getting into protein drinks, even if they are interested, because of the chalkiness or the flavor. And, for those times that I mentioned above where I wanted something that was not high fat or high carb…. a protein shake that was simply water and protein powder was just what I needed. That probably isn’t appealing to many. But you know what? I actually love it. I’m over the chalkiness (of course, I’ve been drinking protein shakes for some 20 years now because they were a big part of my bodybuilding regimen). I’m used to them, have been for a long time. But then something more profound happened… now I even crave the stuff sometimes. I know, weird, huh? Craving a (plain) protein shake? Just the powder and water shaken up? Yes! Once I realized that it indeed filled a physical need for me, it mentally satisfied me. It also filled me up, which is great for people watching calories. It gave me the perfect solution to keeping my diet raw without eating more carbs or fat when that wasn’t what my body was calling for.

A smart trick is finding a protein powder that you like. I did a comprehensive review on protein powders here (be sure to check it out!). I also wrote about my husband’s Protein Grenades to give you some more ideas. I find that the protein powder I love and rely on the most now is Sun Warrior’s Chocolate protein powder. It seems they’ve improved their protein powder just recently and it tastes even better. 🙂

If you’re one of those people who can’t imagine drinking just protein powder mixed with water, try some of the following suggestions to see if they help:

1) Blend the powder with water and ice or…
2) Shake the powder up with really cold water. I find that when the shake is really cold, I enjoy it more. If the water from your tap isn’t cold enough, and you don’t want to use ice, then make the shake in advance and put it in your refrigerator to get cold before drinking it.
3) Add pizazz to it. I love adding 1/4-1/2 teaspoon of cinnamon to mine. Sometimes I add nutmeg, too. Raw vanilla powder is fun, as are other flavors like almond extract or orange extract. (The other day I used peppermint extract!) Add cayenne and give your circulation a boost! Get creative and diversify so they’re not always the same… you can even get extra wild and add garam masala or fenugreek or curry powder. This will keep it exciting.
4) Add extra water. My whole family drinks Sun Warrior’s Chocolate (mom, husband, my brother, and myself). My mom likes hers with more water and she enjoys each sip of it as she takes her time drinking it. I tend to make mine thicker and drink it faster.
5) Mix it with raw coconut water or raw almond milk for variety.

Before I realized that protein shakes were a perfect solution, I used to sit there and think, “I’m hungry. No, I don’t want a bunch of nuts. No, I don’t feel like sugar from fruits. No, I need something more than a huge bowl of plain romaine. I think cooked black beans or lentils would do the trick but I want to keep it raw right now. Hmmm….” That’s when I decided to just drink a protein shake one night because I was out of options. Well, it worked. I was full and satisfied. I was excited because it was a way for me to stick to the raw diet and be happy without filling up on foods I wasn’t in the mood for.

PB and C COOKIE DOUGH BITES

There was once a time when I would buy Pillsbury cookie dough and eat the whole unbaked sleeve myself (gasp!)!!!  Something tells me that didn’t help any of the medical conditions I was experiencing.

I know we all grew-up eating raw cookie dough, but I need to confess that now the idea of eating cookie dough made with raw eggs makes me cringe…can anyone say salmonella?  This cookie dough can be eaten without worry since there are no eggs in the dough.

Do you know what else isn’t in the dough?  Butter.  I have created a healthy cookie dough recipe for those (like me) who have a fondness for eating raw dough.  I do however want to point out that this is a dessert and isn’t meant to be eaten in one sitting (although it would be a heck of a lot better for you to eat this whole batch than a whole batch of conventional cookie dough).  Enjoy!

INGREDIENTS – Makes 30-32 cookie bites

1 cup organic peanut butter

3/4 cup blanched almond flour

1/2 cup pitted Medjool dates

1/4 cup flax meal

1/4 cup vegan carob chips

2 Tbs. water

Mash together the pitted dates and peanut butter.  I wear a latex-free glove and mash them together with my hands.  The dates will not break down completely.

Pour the almond flour and flax meal over the date/peanut butter mixture and combine well.  You can mash it together with your hands or with a pastry cutter.  Add the water and mix well to combine.  Add the carob chips and combine.

Place the mixture in the fridge for 30 minutes to firm-up.

Use a small scoop and shape the dough into balls.

Store the completed cookie dough bites in the refrigerator.  I store mine in a mason jar.

HARVEST SENSATIONS KALE SALAD

UPDATE 4/28/11 – I JUST RECEIVED AN E-MAIL FROM HARVEST SENSATIONS STATING THAT THE PRODUCT IS PRE-WASHED…YEAH!  THEY HAVE UPDATED LABELS STATING THIS.

I have come across another product that I am obsessed with…Harvest Sensations Kale Salad.  A few months ago while shopping at Mother’s Market I saw the 1 pound bag of prepared kale and actually let out a little squeal (I am generally NOT the squealing type).  I love kale and will definitely take the time to prep it when necessary, but it is soooooo nice to have someone else do the work if possible.

This is not a product that Mother’s always keeps on stock, so when I do see it I am sure to snatch-up a few bags.  The last time I was there I made sure I told the produce manager how much I enjoy the product.  Please take the time to get to know the produce manager at your local grocery.  I have found that they are very receptive to suggestions and really do try their best to provide the customers with products they want.

Lately I have been buying the Harvest Sensations kale salad and either using it to make my Marinated Kale Salad or I will pop it in the steamer for a few minutes and keep it in the fridge to use for lunch over brown rice, throw it into soup, or use it as a quick veggie add to our dinner (it is great drizzled with warm dressing).

APPLE PIE INFUSED PECANS

If you have ever soaked nuts in an attempt to destroy their enzyme inhibitors and increase their digestibility, then I am sure you have noticed that they swell to twice their original size.  It was this observation that inspired my latest nut recipe.  I thought, if nuts are able to absorb such vast quantities of water, then surely they are able to absorb any liquid…and boy did they!  The result is subtle, but oh so good.

INGREDIENTS

2 cups pecans

3 cups fresh squeezed apple juice

1 cup crock pot applesauce OR apple juice concentrate*

1 Tbs. honey or agave syrup

1 tsp cinnamon

½ tsp allspice

*to make this recipe completely raw, you can either eliminate the applesauce or add date paste for sweetness

Blend the fresh squeezed apple juice, applesauce, honey, cinnamon, and allspice in a high speed blender.

Place the pecans in a large Glasslock™ container and cover with the apple juice mixture.  Allow the pecans to soak overnight in the refrigerator.

Place the soaked pecans on a mesh dehydrator tray (not a Teflex sheet) and dehydrate at 115 ° for 6-8 hours.  To ease clean-up, I place a Teflex sheet on the tray below the pecans so it can catch any drips.

These pecans are so good on their own.  I keep mine in the freezer and eat them straight out of the freezer (they are extra crunchy that way).  The Apple Pie Infused Pecans would also be a great trail mix ingredient!
