VEGAN CHOCOLATE MOUSSE CUPS – Using Sweetriot Chocolate

I thought I would share with you the dessert I made for us to have tonight after our Christmas Eve meal.  With all of the treats we have been indulging in, I wanted to offer a yummy dessert, but have it just be a few decadent bites vs. a huge piece of cake or pie.

I based the recipe for my “Healthier” Chocolate Mousse on my Chocolate Mousse Frosting recipe (click HERE for that recipe).  I made some alterations to the recipe to make it slightly sweeter and more chocolaty…think dark chocolate.

This mousse is firm, but that is how I wanted it so it would retain its shape when piped.

I used Sweetriot Dark chocolate to make the mousse and I have to tell you that their chocolate absolutely rocks my world and it is vegan, gluten-free, kosher, and their company is carbon-free to boot.

I like to consider myself a bit of a chocolate aficionado and this chocolate hits the mark.  Not only is their chocolate amazing, but they are amazing too!

And let me tell ya…their chocolate makes a killer chocolate mousse!  Without further ado…

INGREDIENTS – Makes 4 1/2 cups

14 ounce package of extra firm tofu (I used Wildwood)
1 cup vegan chocolate OR chocolate chips (I used Sweetriot 85% DARK chocolate that I chopped-up finely)
2cups coconut milk or soy milk (vanilla or chocolate)
6 Tbs. cacao powder
6 packets Sweetleaf stevia
Chocolate cups for serving

Melt the chocolate over a double boiler.

While the chocolate is melting, blend the remaining ingredients in a high speed blender until very smooth (I used my Vitamix). Use the center agitator and stop blending a few times in order to scrape down the sides.

Once the chocolate has melted, add it to the rest of the ingredients in the blender and blend until smooth, scraping down the sides as needed. The mixture will now be warm and not quite yet the consistency of pudding.

To serve the dessert as pudding, pour the mixture into a glass container and allow it to cool in the fridge for 20-30 minutes to thicken.

If using this recipe as mousse, keep it in the fridge for several hours to overnight so it firms-up completely. Prior to piping, you may whip the mousse with a handheld mixer to whip some air into it (this is not necessary, but optional).

Pipe the mousse into chocolate cups or the container of your choosing and serve.

HOLIDAY GRANOLA TEACHER GIFTS

I know many of you may be scrambling right now to come-up with gifts for your children’s teachers and the coaches in their lives.  Our family really values the people who help us shape our children and this year we decided to make them homemade holiday gifts.

Granola has always been a favorite in our home, so we decided to share some of our favorite granola (click HERE for the recipe) with the special people in our lives.  My daughter helped me make the granola and I was very thankful for her help because we made a TON!!!  We made 4 double recipes and luckily it was the right amount…isn’t it funny how things have a way of working out?

We made 24 gifts (each in a 1 quart Ball mason jar).  As a bonus this ended-up being a wonderfully inexpensive project with each gift costing between $5-6 plus our time.  Time well spent.

SPICED CIDER

There is something about spiced cider that just makes me feel like the holidays have arrived.  As I type this post I have a pot of cider brewing on my stove and my house smells amazing…

When I was little it was always a tradition in my house to have a pot of spiced cider on the stove on Halloween.  Now when I think of Halloween I can’t imagine not having the wonderful smell of apple cider wafting through my home.

As kids we used to love to help my mom push the cloves into the oranges.  The design possibilities were endless, jack-o-lantern faces, fun spirals, words, etc.

Spiced apple cider is sinfully easy to make; apple juice, oranges, cloves, and cinnamon sticks.  Bring all of the ingredients to a boil and then lower the heat to a very low simmer.  Test the “spiciness” of the cider as it simmers and when it reaches the flavor profile you prefer, remove the cloved oranges (otherwise it will get REALLY strong).  Throughout the day some liquid will evaporate, so simply pour some filtered water into the pot to bring the volume back up.  The cider will be very hot, so have some ice on hand for when you serve it to little ones.

OKTOBERFEST QUICK MEAL

As a rule I am not a big consumer of mock meats, however from time to time I do crave a hot dog and Oktoberfest is the perfect excuse to indulge my German roots.

A few days ago after a long day of shuttling the kids to and from their activities we came home and as the kids settled into the couch for some reading time I put together dinner in a matter of minutes.

My family does not share my love of sauerkraut, but that just meant more for me…I LOVE IT!!!  If my mom and sis were here with me we would have been fighting over the last bite.

My meal consisted of:

Jumbo Smart Dogs by Lightlife

Bubbies Sauerkraut (It has a nice crunch to it)

Udi’s Classic Hot Dog Buns

Beer and Brat Spicy Mustard
