I am thrilled to share with you some exciting news. I was recently contacted by One Green Planet and invited to become a contributor. I am definitely in good company seeing as many of my plant-based heroes are contributors to the site.
My first post for One Green Planet is now live. My kids went gaga over this pudding recipe (shhhhh….don’t tell them it has 3 cups of zucchini in it!).

Thanks so much for letting us know about One Green Planet. I’d never heard of it before. What a wonderful website. I was just reading about the bears in Asia. Broke my heart. I still don’t understand how humans can be so unkind. Thanks also for the recipe – sounds delicious.
You are very welcome…One Green Planet is such a wonderful resource and I am thrilled to be a part of it.
Crazy recipe- And I mean that in the best way possible! So innovative to use zucchini and sweet potatoes as a pudding base, I would have never thought to try that combo. Now I’m so curious about the taste!
It all started with a smoothie…I added the zucchini in one day when I ran out of my usual veggie add-ins and the results were great. I love it when you stumble upon new food solutions!
Wow- I agree with Hannah! I never would’ve thought to use sweet potatoes and zucchini! I love the soft-serve at Hugo’s as well, but I have never asked them what they use. Good to know! Thanks!
I need to get back up to Hugos…I have never taken my kids and now that school is out I can finally get them up there 🙂
This recipe looks delicious and unique!. I wish I had a vitamix, that will be on my wishlist for a while 🙂
I use my Vitamix EVERY DAY and LOVE it! I would recommend asking your friends and family to pool their money together to purchase you one for your next birthday or the holidays vs. getting a bunch of smaller gifts…you will use it all the time.
Good idea, I’ll definitely do that! I was just slightly drooling over one at Williams Sonoma last night as I walked by. 🙂
