FLUFFY PEANUT BUTTER DIP

I think by now you can tell that I have a real love affair with peanut butter.  The only problem is that peanut butter is a bit high in fat (as are all nut butters).  We can totally enjoy nut butters, but we need to show some restraint and not eat them with abandon.  In an attempt to up my intake volume of PB without upping my fat intake, I made this dip.  I LOVE peanut butter with apples and for years have been cutting my apples in half and filling the hole with PB, but only 2 Tbs or so total.  With this dip I can make myself a nice little bowl of it, slice my apples, and dip to my heart’s content.

INGREDIENTS – Makes 4-6 servings

½ cup organic peanut butter

½ cup So Delicious Vanilla coconut milk yogurt

1-2 packets stevia

~

Mix the peanut butter and yogurt together until smooth.  Add the stevia (one packet at a time, so you can sweeten to taste) and mix.

*Also tastes great with bananas!

    Apples with peanut butter is my 8 year old’s go-to snack for afterschool. I always use natural, unsalted peanut butter (no sugar in it), but adding the coconut yogurt sounds really tasty. I doubt we’d need the stevia, either, but definitely gonna give this a try 😀

    Definitely without the stevia. PB is great with chopped dates. My fav lunch is two rice cakes, 1 tsp of PB on each, 1.5 chopped dates sprinkled on top, and thinly sliced apples over it all. low fat, low calories and so very good. I really like this dip too, it lets me spread more PB with less impact. Thanks!

    This looks so yummy! I too am a peanut butter addict. There, I admitted it, but I have no intention of stopping! Anyway, have you ever heard of a product called PB2? It’s made by a company called Bell Plantation (http://www.bellplantation.com/) They manufacture peanut oil & what’s left of the peanut is used to make PB2. It’s powdered peanut butter! totally natural, nothing added & not chemically treated in the manufacturing process, 85% less fat than regular PB, just mix with water or liquid of your choice, or it’s really good sprinkled on ice cream! I’m going to try it with the yogurt. I bet it will be awesome!

    • I hadn’t heard of the PB2…thanks so much for the introduction. I LOVE eliminating waste and the fact that this is made from the by-product of producing peanut oil is awesome. I just ordered some of the regular and some of the chocolate and can’t wait to try it. I have so many ideas about how to use it!!!
